Sweet Cornbread Muffins

If you know me, you know I'm a big fan of sweets! That includes cornbread...


3/4 cup milk

1/3 cup honey

2 large eggs

1 cup flour

1 cup yellow cornmeal

1/2 cup sugar

2 teaspoons baking powder

1 teaspoon kosher salt

1 stick butter, melted and cooled slightly

Preheat the oven to 350°. Spray a muffin pan with cooking spray and set aside.


Mix together milk Honey and eggs with a whisk.


In a large bowl, mix together the flour, cornmeal, sugar, baking powder and salt. Add in the milk mixture and stir just until combined. Then stir in the melted butter. Be careful not to over mix.


Pour into prepared pan and bake for about 15 minutes, or until a toothpick comes clean from the center. Remove from oven and allow to cool slightly before serving.
