Strawberry Bread

My mom used to make this when we were little. I'm not a big fan of strawberries but I love this bread! This recipe makes 2 loaves.


1 quart strawberries

1 cup sugar

3 cups flour

1 teaspoon salt

1 teaspoon baking soda

1 Tablespoon cinnamon

2 cups sugar

3 eggs

1 ¼ vegetable or canola oil



Clean and top strawberries. Sweeten strawberries by coating with 1 cup sugar. Cover and chill for at least 2 hours.


Mix together flour, salt, baking soda, cinnamon and 2 cups of sugar. Add eggs and oil. Add berries. Mix with electric mixer until well blended. Pour into lightly greased and floured loaf pans. Bake at 350° for 1 hour.
