Banana Chocolate Chip Mini Muffins

One of our favorites! We have adapted this recipe from my mom's Banana Bread recipe.


2 ½ cups flour

1 cup sugar

3 ½ teaspoons baking powder

1 teaspoon salt

3 Tablespoons oil

¾ cup milk

2 – 3 overly ripe bananas

1 egg

1 cup semi-sweet chocolate chips

Preheat oven to 350°. Spray mini-muffin pan with cooking spray. Combine all ingredients in a large mixing bowl except the chocolate chips. Beat together on medium speed until well blended. Stir in Chocolate chips. Bake until edges are golden brown and the tops are firm. You can check with a toothpick in the center. If it comes out clean, they are done. Remove from pan and place on a rack to finish cooling.


Note: This recipe was originally from my mother. She added nuts not chocolate chips and baked it as two loaves of banana bread. If you want to do that, grease and flour 9 x 5 x 3 inch loaf pan or two 8 1/2 x 4 ¼ x 2 ½ inch loaf pans. Bake 55 – 65 minutes.
