Stuffed French Toast

This is one of our favorites! You can eat it for breakfast or dinner.


1 loaf French bread

Butter

1 package sausage

Shredded mozzarella cheese

2 eggs or egg substitute

½ cup milk

1 ½ teaspoons sugar

¼ teaspoon cinnamon

Maple syrup

Brown sausage. Cut bread into 1 ½ inch thick slices. Cut a pocket in the side in the crust of each slice. Butter the inside of pocket. Cut sausage into bite-size pieces and toss with cheese. Stuff into pockets. In a shallow bowl, beat eggs, milk, sugar and cinnamon. Dip both sides of bread in egg mixture. Cook on a greased hot griddle until golden brown on both sides. Serve with maple syrup.
