Potato Vegetable Medley

You can add cooked, cubed chicken to make a full meal.


4 – 5 medium red potatoes, cut up

12 – 15 baby carrots

1 small onion, cut into 8 wedges

½ cup chicken broth

2 teaspoons seasoned salt, divided

1 zucchini, quartered and cut into 1 inch pieces

1 yellow squash, quartered and cut into 1 inch pieces



Combine potatoes, carrots, onion, broth and 1 teaspoon seasoned salt in a 9 x 13 glass baking dish. Cover and bake at 400° for 30 minutes. Stir in zucchini, squash and remaining seasoned salt. Bake 5 – 10 minutes longer or until vegetables are tender.
