Lace Cookies

These cookies are one of my favorites! They are so delicate and a little messy to eat but hey...Nutella!


1 stick unsalted butter

2/3 cup brown sugar

3/4 cup almond flour

1/4 teaspoon salt

1 Tablespoon dark corn syrup

1 teaspoon vanilla extract

Nutella

Preheat oven to 350°. In a medium saucepan, melt butter on medium heat. Add brown sugar, almond flour, salt and corn syrup. Cook, stirring until ingredients are combined for about 3 minutes. Remove from heat and mix in vanilla. Allow dough to sit and thicken for 5 – 10 minutes. Line baking sheet with parchment paper. Drop half teaspoonfuls of dough about 3 inches apart on cookie sheet. The dough will flatten, spread and bubble while baking. Bake 6 - 9 minutes until golden brown around the edges. Cool cookies for 5 minutes on baking sheets. Transfer to a rack to completely cool and turn crisp. When cool, lightly spread Nutella gently on the back of one of the cookies. Add another cookie on top, sandwiching the Nutella between. Sore in an airtight container.
