These are really good and taste like a Mounds Bar but healthier.
1 cup unsweetened shredded coconut
3 1/2 Tbsp honey
2 Tbsp coconut oil
½ tsp vanilla extract
1 cup semi-sweet chocolate chips
1 tsp Crisco
Using a food processor, process together the coconut, honey, coconut oil and vanilla. Line a plate with parchment paper. Form the blended mixture into patties with your hands, then freeze until firm.
In a bowl, add Crisco to the chocolate chips. Adding Crisco will make a smoother chocolate sauce. Microwave for 1 minute. Stir together. If not completely melted, microwave for an additional 30 seconds. Dip the coconut patties into the sauce, coating the entire pattie. Refreeze the patties until the chocolate is firm.
