Corn Spoon Bread

This a recipe is courtesy of the West Virginia cousins! It is a favorite at family gatherings.

1 stick margarine
8 oz sour cream
1 box Jiffy Corn Muffin Mix
2 eggs
1 can regular corn
1 can creamed corn
½ - 1 cup grated cheddar cheese
Beat the eggs and mix with melted margarine and sour cream. Pour in corn and muffin mix. Pour into a 9 x 13 greased pan. Bake for 26 minutes at 350°. During the last 5 minutes, top with cheese to melt.
Note: When I made this last night, it took longer than 26 minutes. You may need to adjust the time.
