Chocolate Meringues

These cookies are like eating a cloud of sugar! They are so light and delicious.



3 egg whites

Pinch of salt

1 cup sugar

2 teaspoons unsweetened cocoa powder

½ teaspoon vanilla

6 oz mini M&Ms

Aluminum foil



Preheat oven to 275˚. Line baking sheets with foil. Beat egg whites with salt until stiff. Gradually beat in sugar. Stir in cocoa powder and vanilla. Stir in mini M&Ms. Drop batter by walnut sized spoonfuls onto prepared cookie sheets. Bake 30 minutes. Transfer entire foil sheet with cookies to a cooling rack to allow cookies to cool. Peel the foil carefully from the back of the cookies. Store in an airtight container.
