Chocolate Fantasy Cake

A good chocolate cake recipe. I’ve also had it referred to as a Texas sheet cake.


Cake

2 cups flour

2 cups sugar

1 cup water

1 stick margarine

¼ cup unsweetened cocoa powder

2 eggs

½ cup buttermilk

1 teaspoon baking soda

1 teaspoon vanilla

½ teaspoon salt


Frosting

2 cups powdered sugar

2 Tablespoons unsweetened cocoa

powder

3 Tablespoons milk

1 teaspoon vanilla

1 Tablespoon margarine, melted



Preheat oven to 400°. Lightly spray 9 x 13 cake pan with cooking spray. In a large bowl, combine flour and sugar. In a sauce pan, combine water, margarine and cocoa powder. Bring to a boil. Add this to the flour mixture, stirring until well blended. Add eggs, buttermilk, baking soda, vanilla and salt. Mix well and pour into cake pan. Bake 20 – 25 minutes or until a toothpick inserted in the center comes out clean. Frost the cake while it is still warm.


For frosting, Combine powdered sugar and cocoa powder in a bowl. Add milk, vanilla and melted margarine. Stir until smooth. Spread over warm cake. Let cool before serving.


Note: Buttermilk substitute – 1 Tablespoon lemon juice added to 1 cup milk, stir and let sit for 5 minutes
