Applesauce

So good and easy to make! This recipe is from my Father-In-Law Tom. Making it at home, I had to substitute the Johnathan apples with red delicious due to a lot of items being hard to find right now. It still turned out great. I can't wait to try it out warmed with a little granola and topped with cool whip.

4 – 5 Granny Smith apples
4 – 5 Johnathan apples
1 large lemon
Cinnamon stick
¼ cup dark brown sugar
¼ cup white sugar
1 cup water
½ teaspoon salt
Peel, core and quarter all the apples. With a vegetable peeler, peel 4 strips of lemon peel (zest only). Cut the lemon in half and juice the lemon. In a large pot, add apple quarters, lemon peels, 3 – 4 Tablespoons lemon juice, cinnamon stick, sugars, water and salt. Bring to boil on high heat. Lower heat, cover pot and simmer 20 – 30 minutes until apples are tender and cooked. Remove from heat. Remove lemon peel and cinnamon stick. Mash apples (I used a potato masher.) Chill.
