Taco Stuffed Peppers

Another recipe that Mike loved!

4 green bell peppers
1 1/2 pounds ground turkey
1 packet Taco seasoning
¾ cup water
½ cup salsa (I used medium)
1 ½ cups shredded cheddar cheese, plus additional for on top (I used half sharp cheddar
& half Mexican blend. It’s what I had)
1 cup sour cream
Cut peppers in half and remove seeds and ribs. Place peppers in a microwave safe dish with ¼ cup water. Cover dish and cook in microwave on HIGH for 6 minutes until tender.
Brown ground turkey in a large skillet. Add taco seasoning and water. Cook until thickened. Add cheese, salsa and sour cream to skillet and stir until blended.
Lay pepper halves in a 9 x 13 baking dish. Stuff with taco meat mixture and top with additional cheese. Bake for 350° for 20 minutes.
Serve as is or with additional salsa and sour cream.
