Salsa

This recipe comes from my father-in-law. It makes a lot of salsa! Feel free to cut it in half or quarters (I have).



10 cups tomatoes, chopped & let them drain (oops, I missed that part)

1 cup red onion, chopped

1 cup yellow onion, chopped

3-4 Jalapeños, seeded & chopped (unless you like it hot)

3-4 medium banana peppers, chopped

3 garlic cloves, minced

1 can mild green chilies (hot if you want hot salsa)

6 ounce can tomato paste

1 1/2 cups vinegar

4-6 Tablespoons lime juice, to taste

1 Tablespoon sea salt or pickling salt

1 Tablespoon granulated sugar

4-6 Tablespoons fresh cilantro

2 Tablespoons ground cumin

1 Tablespoon hot sauce (if you like)


Combine all ingredients in a large bowl. Cover with plastic wrap and refrigerate for at least one hour.


Note: You can also seed the tomatoes
