Meatballs

These meatballs are really good, don't take long to make, healthier than the frozen and versatile. I usually serve them with spaghetti and sauce but last night we baked them with ravioli and sauce covered with mozzarella.


½ cup dried bread crumbs

¼ cup milk

1 pound ground turkey

¼ cup Romano cheese, grated

2 egg whites

2 garlic cloves, coarsely chopped

2 teaspoons dried parsley

2 teaspoons dried oregano

½ teaspoon salt

½ teaspoon pepper

Mix bread crumbs and milk in a small bowl. Set aside for 5 minutes.

In a large bowl, combine ground turkey, cheese, egg whites, garlic, herbs, salt and pepper. Add softened bread crumbs. Mix together ingredients until well blended.

Shape mixture into 16 meatballs and place on a microwave safe plate. Microwave on high for 5 minutes. Check to see if they are cooked all the way. They will probably need to be microwaved another 2 – 3 minutes on high.
