Loaded Cauliflower

I'm always looking for new recipes and I found this one on Pinterest. Mike and I eat it quite often!

2 heads cauliflower, cut into bite size pieces
2 Tablespoons olive oil
½ teaspoon salt
½ teaspoon coarse black pepper
8+ ounces shredded cheddar cheese (we use Mexican blend)
8 slices bacon, cooked & crumbled
2 – 4 green onions, sliced thin (optional)
Preheat oven to 350°.
Place the cauliflower in a large bowl and add olive oil. Toss to coat.
Wrap 2 baking sheets with aluminum foil. Spread the cauliflower out onto the baking sheets and season with salt and pepper. Roast for 20 – 30 minutes.
Remove the baking sheets from the oven and push all the cauliflower into a pile in the center of one of the baking sheets. Cover the cauliflower with cheese and bacon.
Return the cauliflower to the oven and bake for an additional 5 – 10 minutes until the cheese is melted.
Remove from the oven and top with sliced green onions.
