Chili-Mac

This is a great recipe is healthy and filling, especially when it is cold outside.

Cooking Spray
1 pound of ground turkey
½ - 1 cup onion, chopped
29 ounce can stewed Mexican-style tomatoes (or 2 small cans)
2 ½ cup canned tomato juice
4 ounce can chopped green chilies
2 teaspoons chili powder
1 pound box elbow macaroni
31 ounce can pinto beans, drained & rinsed (or 2 small cans)
Finely shredded cheese (sharp cheddar or Mexican blend work well)
Hot sauce (my husband likes to add this)
Coat a large skillet with cooking spray. Cook ground turkey and onion over medium high heat until meat is browned.
Stir in stewed tomatoes including juice, tomato juice, chilies and chili powder. Bring mixture to a boil.
Stir in macaroni and beans; returning to a boil. Reduce heat, cover and simmer for 15 minutes. Serve topped with cheese and hot sauce if desired.
