Cajun Pork

My friend Sam is an amazing cook!!! She is one of those people who can take whatever she has, mix it together, season it and end up with something absolutely delicious. She also usually cooks enough to feed a small army. I wrote down this recipe after watching her make it because I am someone who needs a recipe. We usually eat it with flavored boxed rice (Mexican or Lime-Cilantro work well), topped with tomatoes, beans, cheese, hit sauce, etc.


4 pound pork loin Cajun seasoning (I use Rib Rack Seasoning Cajun Spice Rub 5.5 ounce jar) Coarse black pepper water Place pork in crockpot and cover with water. Add about 1/3 jar of Cajun Seasoning and a generous amount of pepper. Set crockpot to cook on low for 8 – 10 hours. After about 7 – 8 hours, take out pork a little at a time, shred and return it to the crockpot to finish cooking.
