Burrito Bowl

We serve this meal buffet style. That way everyone can add what they want.



2 boxes Rice-A-Roni Mexican rice (We had to use Spanish rice this time since that was what the store had)

Chicken breast (I broiled mine but you can use rotisserie or whatever you prefer)

1 can Black Beans, drained & rinsed

1 can Fiesta Corn

Bell Pepper, cut into strips (whatever color you like)

Onion, cut into strips

Salsa

Sour Cream

Mexican Blend shredded cheese

Hot Sauce (Mike prefers Scotty O’Hotty from Jungle Jim’s)

Prepare rice according to directions on the box. Broil chicken in the oven. Remove, cool slightly and shred. Warm beans & corn in microwave. Sauté pepper and onion on stove top.


Layer rice in bottom of a bowl. Add ingredients above to your liking.
