Sausage Tortellini Soup

We've been trying some new recipes! This soup was nice with the cold winter weather we've been having.


9 ounces Buitoni Cheese Tortellini

1 pound Italian sausage (I used turkey Italian sausage.)

2 teaspoon olive oil

1 medium onion

1 Tablespoon garlic, minced

14.5 ounce can dice tomato

2 Tablespoons tomato paste

2 teaspoon Italian seasoning

1/2 teaspoon chili flakes

salt to taste

32 ounces chicken stock

1/2 cup Half & Half

Grated parmesan


Heat olive oil in a stock pot. Sauté onion and garlic in hot oil, until it has softened. Remove turkey Italian sausages from their casings and add to pot. Break sausages apart as they cook until no longer pink. Add tomatoes, tomato paste, seasonings and chicken stock.


Mix well and let it come to a boil, then lower heat. Let cook on low for 10 minutes. Add dried tortellini. Let it cook until it is tender, add half and half. Mix everything well.


Serve with grated parmesan and chopped parsley sprinkled on top.
