Cauliflower Broccoli Cheese Soup

As requested by Sophia's family. Sophia was always asking me to make this for her! A lot of times I make this soup after Christmas or Easter when there are leftover veggies. The recipe can be changed by adding whatever fresh or can veggies you have.



1 head broccoli 1 head cauliflower Large can chicken broth 10 ounces Velveeta, cut into little cubes Black pepper to taste Cut up broccoli and cauliflower into bite size pieces. (I do not like the stems, so only use the flower part but it is your preference.) Bring cauliflower, broccoli and chicken broth to a boil in a large soup pot. Reduce heat and simmer 4 – 5 minutes. Add Velveeta. Season with pepper when cheese is melted.
